10 Broccoli Recipes Even Children Will Love

Stereotypes are meant to be broken... (most) children don't hate broccoli, it may just be that (most) adults don't know how to sell it properly. So here are my 10 favourite kid-friendly Broccoli recipes.

1. Mushroom and Broccoli Quinoa with Eggs and Oyster Sauce

Did someone say superfoods? This meat-free dinner teams the goodness of quinoa and coconut oil with a deliciously simple mushroom and broccoli stir-fry. Round out the flavours and add protein with a golden, sunny-yolked fried egg.

2. Broccoli and Pancetta Pasta with Toasted Almonds

While this pasta with broccoli may be simple, it’s anything but bland. Don’t throw out the stem, peel and chop it and add it to the pot with the florets and casarecce pasta, then accessorise with garlic, smoky pancetta and toasted almonds for crunch.

3. Broccoli Pesto Pasta with Pumpkin Seeds and Cannellini Beans

Our broccoli pesto gets great flavour and depth from roasting first (look for those brown, caramelized bits) and fresh herbs. We kept a few pieces whole for texture, while the rest is creamy enough to coat the pasta. This dish is full of goodness: antioxidant nutrients from parsley; pumpkin seeds for protein and that extra crunch we all love.

4. Broccoli and Corn Chowder with Green Chilli

Chowder, a creamy soup originating from England and later brought to America by English immigrants, is traditionally thickened with cream, milk or a roux, but we've toned down the richness of the original recipe, re-creating that sumptuous velvety texture by blending potatoes with milk and cashews. Mild green chilli and fennel spice things up, while a dollop of yoghurt adds a cool touch.

5. Broccoli and Bacon Casarecce with Toasted Almonds

You don't always need a tomato or cream sauce to dress your pasta. Here, casarecce holds together a zesty broccoli, spinach and bacon mixture that's further enriched with garlic and parmesan. A dash of pasta water, some lemon juice and a drizzle of olive oil is all you need to coat and loosen up the dish, while a final garnish of toasted almonds brings it all together.

6. Broccoli and Pea Miso Soup with Crunchy Seed Topping

Give broccoli soup an exciting Japanese makeover with a dose of dried kelp and bonito, fermented soybean paste and irresistibly moreish soy-marinated seeds and nuts. Exploding with umami-rich flavour, this vibrant bowl is like an Asian take on broccoli and Stilton soup, but with even more flavour and fantastic crunch to boot.

7. Parmesan and Broccoli Balls with Basil Spaghetti Sauce

By blending broccoli, almonds, parsley and parmesan, you can make meat-free meatballs that look just like the real deal. While the spaghetti cooks, simply bake the falafel-style rounds until golden brown, and whip up a quick tomato sauce laced with fragrant basil. Getting veggies into the kids has never been easier.

8. Broccoli and Capsicum Pizza with Pesto and Almonds

This vegetarian lover’s pizza features a crispy base, basil pesto sauce and generous chunks of broccoli and capsicum, so it’s good for the family as well as moreish. Simply scatter with peppery rocket, toasted almonds and chilli flakes for the adults for even more reasons to dig in.

9. Broccoli and Anchovy Spaghetti with Lemon and Capers

Hailing from Italy, the combination of broccoli, anchovy and a little dried chilli is a pasta classic. It’s also quick to make and a vibrant change to regular tomato-based sauces. Finish off with grated parmesan and a squeeze of lemon, just as it’s enjoyed in the Mediterranean.

10. Beef and Broccoli Spaghetti with Red Capsicum

We love a good spag bol, but too often it's a heavy affair. Give this classic a new look and great flavour by creating a lighter sauce from fresh roma tomatoes. Throw in some sweet red capsicum and fresh vibrant broccoli - suddenly spag bol becomes a balanced dinner.
