2. Stuffed Capsicum with Couscous and Herb Oil
Capsicums are an excellent source of vitamin C which makes them a great addition to your diet in summer when oranges are not in season. Here, we've filled them with a fluffy couscous mixture that's tossed with charred broccolini and shallot and finished it off with a drizzling of garlicky herb oil.

This vegetarian lover’s pizza features a crispy base, basil pesto sauce and generous chunks of broccoli and capsicum, so it’s good for the family as well as moreish. Simply scatter with peppery rocket, toasted almonds and chilli flakes for the adults for even more reasons to dig in.
